Once upon a time, Beth used to hang out with our listeners every few weeks on Instagram for a Q&A we called “Dear Beth.” What we thought would be extensions of our political conversations often (as they are wont to do) turned beyond politics to the things that were on your minds outside of politics. We are always grateful for the trust you place in us to hold your stories, your fears, your dreams, and the things going on in your lives, but “I hear you” only goes so far. Beth developed a habit of saying, “I’d like to send you a virtual cobbler” as a way of saying “you are my neighbor in this disembodied internet space, and if I was next door to you and knew you were going through these things, I’d bring you something warm and sweet to take the bitterness out of these days” (because that is what we do around here).

If you’d like to turn that virtual wish into a dish, here is Beth’s easy Peach Cobbler recipe:

Peach cobbler

  • Melt one stick of butter and place in casserole dish.

  • Open one can of peaches and pour in with most of the juice.

  • In a separate bowl, mix one cup of flour with one cup of sugar. Add one cup of milk and stir.

  • Pour the flour/sugar/milk mixture over the butter and peaches. DO NOT STIR.

  • Bake at 400 degrees for about 45 minutes.

Sheet Pan Nachos

  • There are a million ways to do this. Make it easy for yourself. Cover a baking sheet with aluminum foil. Spray that foil with nonstick cooking spray. Open a bag of tortilla chips (actually, why not Doritos?) and spread as many as you want on the baking sheet.

  • Cook your favorite protein—beef, chicken, tofu, whatever, with taco seasonings (I just use cumin, onion powder, garlic, chili powder, oregano, and salt and pepper). Toss in some vegetables for extra gold stars.

  • Spread your protein over your chips and add what you love - black beans, salsa, corn (I want extra corn, always), more veggies. Perhaps you’d like to top it with copious amounts of cheese. This is a good idea.

  • Bake at 400 degrees for 5-10 minutes and enjoy. If you want more, top with extras like fresh cilantro, avocado or guacamole, lettuce, sour cream, or squeeze fresh lime over top
